Mr. Wang’s Jalapeño Chicken
1 lb chicken Leg meat, cut into 3/8-inch strips or pink finger size
1/4 cup cornstarch
4 cups + 2 teaspoons vegetable oil
1/2 teaspoon chopped garlic
1 tsb rice wine
2 tbs soy sauce
2 tbs sugar
2 Jalapeños cut in half and 3 pcs
Mix chicken and ¼ cup cornstarch well and allow to stand for 5 minutes.
Heat 4 cups vegetable oil and fry chicken until it is crispy, and add Jalapeños for 10 seconds and remove chicken and Jalapeños from oil. Keep wok hot.
Add 2 teaspoons vegetable oil in wok; add chopped garlic, rice wine, soy sauce and chicken. Stir-fry well.
Add sugar and continue stirring for 2 minute.
Remove from heat and serve.
