Mr. Wang’s Sautéed Mushrooms
3 cups oil
1 pound whole, medium size mushrooms
1/2 tablespoon chopped garlic
1 tablespoon cooking wine
8 tablespoons soy sauce
8 tablespoons water
1 teaspoon sugar
1 teaspoon cornstarch plus 2 teaspoons water
Heat pan or wok; add 3 cups oil and heat.
Fry mushrooms for about 3 minutes or until they turn light brown then remove
and drain oil.
In the same pan or wok, add chopped garlic, cooking wine, soy sauce and water;
boil about 1 minute.
Add mushrooms and cook about 2 minutes; add sugar; stir fry for about 30
seconds then add cornstarch mix (2 teaspoons water and 1 teaspoon cornstarch
mixed together); stir fry for about 30 seconds.
Remove from heat and serve.
