Mr. Wang's Sesame Chicken

[Serves 5 to 6]

3 pounds of boneless chicken legs or breasts.
2 cups of flour.
2 cups of cornstarch.
1 teaspoon of baking powder.
2 cups of water.
1 egg.
4 cups of oil.

  1. Cut chicken in to 2 to  inch cubes.
  2. Mix flour, cornstarch, baking powder, water, and egg.
  3. Marinate for 20 minutes.
  4. Add chicken pieces a few at a time in to the hot oil.
  5. Deep fry until golden brown.
  6. Drain and repeat with the remaining chicken.
  7. Cover with sesame sauce.
Sesame Sauce

4 cups of water.
1 teaspoon of salt.
1 teaspoon of hot sauce.
1/3 cup of cooking wine.
1 cup of soy sauce.
1 cup of vinegar.
1/3 cup of ketchup.
4 cups of sugar.
1 tablespoon of tomato sauce.
2/3 cups of water.
1 cup of cornstarch.
1 tablespoon of sesame seeds.

  1. Put 4 cups of water in the pan.
  2. Add salt, hot sauce, cooking wine, soy sauce, vinegar, ketchup, sugar, and bring to a boil.
  3. Add tomato sauce, stirring continuosly.
  4. Mix 2/3 cup of water and cornstarch, then add slowly to the sauce, stirring continously until it boils.
To server, pour over food. Sprinkle with sesame seeds.
